If you love our Broccoli Cheddar Soup, this creamy potato, carrot and green onion casserole makes a delicious addition to your holiday spread, weekend brunch or as an easy weekday side.


  1. Preheat oven to 450°F. In large mixing bowl, combine potatoes, soup, cheese, carrots, sour cream and green onions.
  2. Spread in lightly greased 9” x 13” baking dish and top with crumbled potato chips, if using. Bake for 20-25 minutes, until vegetables are tender and top is golden brown.
