Broccoli Cheddar Quinoa Bites

As a weeknight side or game day snack, quinoa has never been so fun to eat, especially since it is combined with Broccoli Cheddar Soup.
- Preheat over to 400° F. Spray muffin tins with non-stick cooking spray. Set aside.
- In a large bowl, combine soup, cooked quinoa, egg, cheese, and breadcrumbs. Mix well. Season with salt and pepper.
- Place 1/4 cup of mixture into prepared muffin cups. Bake for 18-20 minutes or until edges turn golden brown. Allow to cool for 5 minutes before removing from pan.
