Lentil Barley Salad

A dish that’s both light-tasting and hearty can be hard to find, but you can look no further than this Lentil Barley Salad. Packed with fresh veggies and flavored with a zingy vinaigrette, it’s a definite keeper.
- Heat lentil-barley mixture according to package instructions. Set aside and allow to cool slightly.
- In the meantime, combine tomatoes, onion, celery and bell pepper in a medium bowl. Add cooled lentils and barley and dressing. Season to taste with salt and pepper. Garnish with crumbled Feta, if desired.

- If you can’t find lentil-barley mix near pre-cooked rice pouches, buy them separately and use 8-9 oz. of each. Look for canned lentils or cooked lentils in the fresh produce area, and any pre-cooked grain in the packaged rice aisle.
