French Potato Salad

There’s no need to jet off to the French countryside when you can whip up this delicious potato salad in your own kitchen. Our vinaigrette-based dressing keeps flavors bright, and crisp-tender green beans add satisfying crunch.
- Place potatoes in a large pot and fill with enough cold water to cover. Generously salt water and bring to a boil. Reduce heat and simmer until potatoes are easily pierced with a fork, about 10 minutes. During the last 2 minutes, add haricots verts to the potatoes.
- Strain potatoes and haricots verts into a colander, rinse with cold water to slow cooking, and drain thoroughly. Place into a large bowl and toss with dressing while potatoes are still warm.
- Add onion and dill. Toss thoroughly until well combined and season with salt and pepper to taste.

- Haricots verts are French green beans – slimmer and more tender than American green beans. If you can’t find them, regular green beans will work just fine, but look for thinner beans.
