Forget basic scrambled eggs and elevate your breakfast with this broccoli cheddar frittata. Rich flavor, minimal ingredients and so versatile that you can also pair it with a salad for a weeknight dinner or let it be the star of your Sunday brunch.

Steps

  1. Preheat oven to 350°F.  In a large bowl, combine eggs, soup, 1/4 cup cheese, and broccoli.  Mix well, season with salt and pepper, and set aside.
  2. In a 10” ovenproof non-stick skillet, heat oil over medium high heat and add onion.  Cook until translucent, about 2 minutes.  Add egg mixture and cook until sides start to set, about 5 minutes.  Sprinkle remaining cheese over the top and place in oven.
  3. Bake for 16-18 minutes or until center is set.  Turn oven to low broiler and cook until top is golden brown, about 2 minutes.

Or, Try This

  • Thaw frozen broccoli in the microwave 1-2 minutes, and drain excess water. Or, find fresh florets in a microwaveable steam bag in the produce section and cook according to package instructions.
